Settling tanks are used for settling honey so as to filter out any remaining dirt with usually rise to the top. Honey is placed in the storage container after passing through a sieve. The honey is then allowed to settle for a day or two. Settling of honey is crucial as it makes elimination of scum possible. After a day or two the scum raises to the top allowing it to scoped out. Scum is very minute and cannot be filtered out using a sieve. It is however light and will settle on top of the honey after a few days.
